BOMBAY STYLE PAAV BHAJI
To make Bombay-style Pav Bhaji, a popular street food dish from Mumbai, you'll need the following ingredients:
FOR BHAJI
2 large potatoes, boiled and mashed
1 cup cauliflower florets, finely chopped
1/2 cup green peas
1 large onion, finely chopped
1 large tomato, finely chopped
1 capsicum (bell pepper), finely chopped
2-3 green chilies, finely chopped
1 tablespoon ginger-garlic paste
2 tablespoons Pav Bhaji masala
1 teaspoon red chili powder (adjust to taste)
1/2 teaspoon turmeric powder
Salt to taste
2 tablespoons butter
1 tablespoon oil
Fresh coriander leaves, chopped
Lemon wedges for serving
For the Pav (bread rolls):
8 Pav buns
2 tablespoons butter
1 teaspoon Pav Bhaji masala
Finely chopped onion for garnish
Optional:
Finely chopped coriander leaves for garnish
Finely chopped raw onion for garnish
Now, let's move on to the preparation steps:
Heat oil and butter in a large pan or griddle on medium heat.
Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn translucent.
Add the ginger-garlic paste and cook for a minute until the raw smell disappears.
Add the finely chopped tomatoes and cook until they become soft and mushy.
Add the cauliflower florets and green peas. Mix well and cook for a few minutes.
Now, add the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together.
Add the mashed potatoes to the pan and mix well with the other ingredients.
Use a masher or a potato masher to mash all the ingredients together. Keep mashing until you achieve a smooth consistency. You can leave it slightly chunky if you prefer.
Add a little water to adjust the consistency of the bhaji. Mix well and let it simmer for 5-10 minutes to allow the flavors to blend.
While the bhaji is simmering, prepare the Pav. Slit the Pav buns horizontally, but not all the way through.
Heat a griddle or pan and spread butter on it. Sprinkle a pinch of Pav Bhaji masala on the butter.
Place the Pav buns on the griddle, cut side down, and toast until they turn light golden brown.
Once the Pav buns are toasted, remove them from the griddle and keep them aside.
Add a dollop of butter to the bhaji and mix it in. This gives the bhaji a rich flavor.
Garnish the bhaji with freshly chopped coriander leaves.
Serve the hot bhaji with the Pav buns, a lemon wedge, and garnish with finely chopped raw onions and coriander leaves.
