METHI KE THEPLA
To make Mea thi Thepla, popular Indian flatbread made with fenugreek leaves, you'll need the following ingredients:

Ingredients:
1 cup whole wheat flour (atta)
1/4 cup besan (gram flour)
1/4 cup finely chopped fresh methi (fenugreek) leaves
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust according to your taste)
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon sugar
1 tablespoon oil (plus more for cooking)
Water (as needed for kneading the dough)
Instructions:
In a mixing bowl, combine the whole wheat flour, besan, finely chopped methi leaves, turmeric powder, red chili powder, cumin powder, coriander powder, salt, and sugar.
Add 1 tablespoon of oil to the mixture and mix well.
Gradually add water little by little and knead the mixture into a soft dough. The amount of water needed may vary, so add it slowly until the dough comes together.
Once the dough is formed, cover it and let it rest for about 15-20 minutes. This will help the dough to become more pliable.
After resting, divide the dough into small portions and roll each portion into a ball.
Take one dough ball and flatten it slightly. Dust it with some dry flour and roll it out into a thin circle using a rolling pin. If needed, dust with more dry flour to prevent sticking.
Heat a tawa or non-stick skillet over medium heat. Place the rolled thepla on the hot tawa.
Cook the thepla for a minute or two until small bubbles start to appear on the surface.
Flip the thepla and apply a little oil or ghee on the cooked side. Then, flip it again and apply oil or ghee on the other side.
Cook the thepla, pressing gently with a spatula, until it turns golden brown on both sides.
Remove the cooked thepla from the tawa and place it in a casserole or wrap it in a clean kitchen towel to keep it soft and warm.
Repeat the process for the remaining dough balls, rolling and cooking each thepla.
Serve the Methi Thepla with pickle, yogurt, or any chutney of your choice.
